Wild garlic, also known as Ramsons often appears as a flowering carpet in shady Irish woodlands around April and May. Considered an important food source in early Ireland, it would have been collected along with watercress and wild sorrel to be eaten either raw or cooked in a soup. It was also often used to flavour butter instead of salt. Sally’s illustration perfectly captures the spherical clusters of white star-shaped flowers that can easily be spotted on the forest floor. The long broad leaves are edible, with a pungent smell and strong, garlic flavour, it can be used to make a very good wild garlic pesto.
